So riding on the coattails of the savory meat craze, beginning July 2nd, azie presents Sous-Vide Short Ribs. Coming in at 18 ounces, these bone-in short ribs are prepared sous-vide and then grilled in a high-tech infrared T Grill, after which your heavenly short ribs are served. The new cutting edge infrared technology enables the ribs to maintain their natural jus after grilling so you can taste the most mouthwateringly fresh beef flavors!
Azie’s Sous-Vide Short Ribs are prepared sous-vide, which is a French preparation method that helps ingredients maintain their natural essences while allowing for the perfect absorption of flavors and sauces, making it the ideal for cooking thick and juicy short ribs. To prepare, chefs first place the short ribs in a vacuum sealed bag along with seasons and sauce and then place the bag into a vacuum machine where all the air is removed. Afterwards, the bag is placed into an Australian imported temperature control machine where the meat is heated at a low temperature for 8 hours, during which the meat is cooked and the flavors are absorbed into every inch of the ribs. After the sealed bag is removed, chefs grill the ribs for color and additional flavor and prior to serving, the remaining jus is drizzled onto the ribs and then served along with a tasty side of vegetables and baked potato for the ultimate sous-vide short rib combination.
Because the ribs are cooked at a temperature below boiling, it is steamed slowly andthere is no contact with any other oils or water, thereby preserving the purity of the meat and ingredients. Therefore, this preparation method is ideal for health conscious eaters; additionally, its slow cooking time allows for an even dispersion of heat so that the consistency and tenderness of the meat is exceptionally good, making sous-vide the optimal cooking method to enjoy premium quality meat.
And beyond using the sous-vide cooking method, azie uses a high-tech infrared T Grill to permeate the meat to ensure even and thorough heating for flavor maintenance.
